Loaded Sourdough Avocado Toast!

I went to the farmers market and there was a baker there selling an olive sourdough that was just bursting with olives! As I have said many times, this way of life is not about restriction. If you have (or if you make!) a bread that you love, I encourage you to pile on the protein and fiber, and enjoy it!

This loaded avocado toast has a few more calories than I typically eat at breakfast, more than half of those calories come from the bread, and (yes) it has carbs. …but I still fit this healthy breakfast into my meal plan for the day! Trust me when I tell you that I didn’t think about my next meal for a few hours after eating this!

…and if you can get farm fresh arugula where you live, I suggest eating it with everything! So peppery and delicious!

  1. Combine the egg with the egg whites and scramble in a non-stick skillet coated with cooking spray.

  2. Top the toasted bread with the avocado, then the scrambled egg, finish with arugula, and enjoy!
