This is one hearty and delicious breakfast! I love to eat egg whites for breakfast because they are so high in protein and low in calories, but just eating them plain can be so bland and boring! In order to meet my protein goals for a breakfast like this, I start with 3/4 of a cup of egg whites, which is 20 g of protein, and that makes a lot of eggs! …too much to fit on an English muffin sandwich! So what do I do? I put as much as the sandwich will take, and eat the rest on the side! This is a huge breakfast that will keep you full for a very long time, and it is perfect for those mornings when you wake up really hungry.
If you have not tried scrambling some ground flaxseed into your eggs, give it a try. I love the savoriness that it adds, and of course that fiber!

Warm the broccoli through in a non-stick skillet coated with cooking spray.

Scramble together the egg white and the flax seed, then add the mixture to the skillet.

Season generously with salt & pepper, reduce the heat, and cover until the eggs are cooked through.

Use some of the eggs to make a sandwich with the English muffin, the cheese and the bacon, buttering the top half of the muffin.

Serve the rest of the eggs on the side and enjoy!
