Spaghetti & Meatballs!

This is the real thing, guys! When I’m celebrating, when I’m sad, when I’m tired, when it’s cold outside, when I want to eat outside… spaghetti and meatballs is MY FAVORITE COMFORT FOOD of all time! #1 for me, hands down!

In order to make a healthy lifestyle sustainable, we have to find a way to incorporate our favorite foods. Dial down the pasta a bit, and dial up the meatballs, and you will be sure to get that protein in! …and who would ever say “no” to an extra meatball?

Spaghetti & Meatballs!

You get let your food processor do all of the chopping on this one!

Ingredients

For the Sauce:

For the Meatballs:

...plus 4 cups of your favorite cooked pasta (1 cup per serving)

  1. To make the sauce, sauté the garlic in the olive oil until fragrant, then add the rest of the ingredients with a little water to rinse out the tomato can.

  2. Simmer the sauce on low, partially covered, while you make the meatballs.

  3. For the meatballs, put the onion, carrot, celery, garlic, and parsley into a food processor and process until the vegetables are minced.

  4. Combine the minced vegetables with the beef, bread crumbs, milk, cheese, egg and seasonings, and form into 12 meatballs.

  5. Brown the meatballs on all sides, then gently transfer the partially cooked meatballs to the sauce to finish cooking.

  6. Serve with your favorite pasta, and enjoy!
