Green Lentil Curry Bowl!

This delicious, high protein, high fiber green lentil curry is creamy, beautifully spiced, and seriously comforting. I really like to use full fat coconut milk when I am making a curry like this one because the full fat version brings a silky richness to the curry that you just cannot get when you use light coconut milk.

To bump up the protein in the lentils I added chicken bone broth and nutritional yeast, and to bring my whole meal to over 30g of protein all I had to do was add a refreshing cilantro, lime yogurt and 1/3 cup of jasmine rice!

…and did you know that brown lentils are lower in calories than green lentils? If this meal is coming in a bit high on calories for your day, swap the green lentils for brown ones! These are the little things we learn when we use a nutrition tracker.

Description

If you are vegan or vegetarian, it is totally fine to swap the chicken bone broth for vegetable broth. It will just change the macros just a little bit.

And this one is GREAT for meal prep - it's even better the next day!

For the curry:

  1. Saute the onion, ginger, and garlic in the grapeseed oil, in a deep pot over medium heat, season with salt & pepper, and cook until the vegetables are softened and slightly browned.

  2. Add the curry powder, turmeric powder, and red pepper flakes, and continue to cook for 1 minute to toast the spices.

  3. Add the lentils and toss to combine, then add the coconut milk, bone broth, and nutritional yeast.

  4. Bring the curry to a bowl then reduce to a simmer, cooking uncovered until the lentils are cooked through and the mixture forms a stew (approximately 40 minutes), adding more salt to taste.

For the cilantro lime yogurt:

  1. Combine the yogurt, lime zest, cilantro, and salt & pepper in a small bowl.

To serve:

  1. Serve 1/3 of the curry and 1/3 of the yogurt sauce with 1/3 cup jasmine rice, and enjoy!
