Southwest Eggs with Black Beans!

Every week I meal prep a half of a pound of beans, and on this particular week my bean of choice was black beans! Eggs, beans, cheese, avocado, and Mexican spices… What an absolutely perfect combination all on one plate. This simple breakfast was not only delicious, it also delivered all of the protein and fiber that I needed to start my day off strong!

One of the ways that I love to use meal prepped beans is definitely to add them to my eggs. If you haven’t yet tried adding beans to your eggs, I absolutely encourage you to give it a try. They add the perfect starchy bite, and they really make a basic egg breakfast so much more satisfying.

Don't have black beans? White beans, kidney beans, or any bean is absolutely delicious here as well!

  1. Scramble together the egg, egg whites, chili powder, cumin, and season with salt & pepper.

  2. Pour the egg mixture into a non-stick skillet coated with cooking spray over medium low heat.

  3. Sprinkle on the black beans, then the cheese, then cover and cook until the eggs are cooked through (about 3-5 minutes).

  4. Serve with avocado on the side, seasoned with Spike Seasoning, and enjoy!
