I woke up really hungry and was craving pancakes (as ya do some Sunday mornings), and at my house every meal provides an opportunity to meet my protein and fiber goals for the day.
These delicious, quick, and easy banana pancakes checked every single box! They busted that pancake craving and provided great nutrition at my first meal of the day! The banana and that little bit of vanilla protein powder brought great sweetness, and I just had to top my pancakes off with a little butter and maple syrup! The butter and maple syrup added a few extra calories and carbs, but that’s what’s so beautiful about being just a little more intentional when you eat. I tracked those calories and carbs, enjoyed every single bite, and it’s fine!
Um… …and this portion size? Wow. Needless to say, I was stuffed after breakfast!
Isn’t it great too how you can tell that these aren’t ai? They are certainly not perfect circles …because they came out of a real home kitchen!

Instructions
Combine the mashed banana, pancake mix, egg whites, and protein powder to form a pancake batter.
Pour into a non-stick skillet coated with cooking spray, and cook pancakes over medium-low heat on both sides.
Serve with butter and maple syrup, and enjoy!
