Berry Breakfast Bake!

With cottage cheese, yogurt, berries, and a few other simple ingredients, you can make an absolutely delicious high protein, high fiber, low calorie breakfast! I love trying new ideas and coming up with simple recipes to keep things interesting! For me, being intentional about my nutrition isn't just a phase, and it isn't a diet! It's all about self care and living healthy for the rest of my life. ...and I NEVER want to feel like I'm deprived or suffering, just to get in that nutrition! This is a great idea if you're ready to try a little something new!

High protein low calorie berry breakfast bake

Ingredients:

1 ½ cup 2% Cottage Cheese
114g 2% Fage Yogurt
2 Eggs
4 tsp Maple Syrup
1 tsp Vanilla
Pinch of salt
100g Raspberries, divided
100g Blueberries, divided
2 tsp Raw (Turbinado) Sugar, divided
9g Catalina Crunch Honey Graham Cereal, divided

Instructions:

  1. Blend together the cottage cheese, yogurt, eggs, maple syrup, vanilla and salt until smooth.

  2. Divide the creamy mixture evenly between two oven-safe containers, coated lightly with cooking spray.

  3. Place 50g of the raspberries and 50g of the blueberries in each container, then sprinkle each mixture with 1 tsp of raw sugar.

  4. Bake at 350 for approximately 30 minutes, until the bake is set.

  5. Sprinkle 4.5g of the cereal on each finished breakfast bake, and enjoy!


Makes 2 servings: 35g Protein, 6g Fiber, 374 Calories per serving
