Sweet Potato Pumpkin
Spice Pancakes with
Butter & Honey!

You can just forget about the fact that these pancakes are high in protein, high in fiber, and low in calories! Oooooh. Woooowwww. These areSO GOOD! ...and one portion is so much! I am already planning to make them again! Can't stop, won't stop with the pumpkin spice vibes over here in the fall!

Ingredients:

63g Kodiak Protein Power Cake Buttermilk
Flapjack & Waffle Mix
Pumpkin Pie Spice (to taste)
50g cooked Sweet Potato
112g 2% Fage Greek Yogurt
¼ cup Egg Whites
10g Honey, divided
Pinch of Salt
Water
4g Butter

Instructions:

  1. Combine all of the ingredients in a bowl with 5g of honey and mix until smooth.

  2. Add water until you get to pancake batter consistency.

  3. Cook pancakes over low heat in a non-stick skillet coated with cooking spray for about 4 minutes before turning.

  4. Cook for about 2 minutes on the other side until cooked through.

  5. Slather cooked pancakes with butter and drizzle with 5g of honey.


Makes 1 serving: 34g Protein, 7g Fiber, 435 Calories
