Have you ever seen a more beautiful plate of protein, fiber, and fresh ingredients? This is a simple little lunch that I put together with some leftover cooked chicken and a few other things that I always have on hand.

I love using garlic and herb Laughing Cow cheese as a base. Each wedge is only 25 calories and it adds nice flavor and more protein!

…and after I slice that tomato for the top, why wouldn’t I just cut up the rest and eat it on the side?
