It’s so good in these tuna patties, and it’s also amazing on avocado, cottage cheese, and roasted vegetables! Tuna Burger with Lemon Mayonnaise!

For the Tuna Burgers:

Combine the tuna, egg whites, egg, Spike, parsley, celery, onion, and lemon zest in a bowl.

Divide the mixture into three portions and form each portion into a tight ball, squeezing out (but reserving!) the liquid.
- Add each ball to a non-stick skillet coated with cooking spray and gently form into a patty shape.

Pour the reserved liquid (it’s the eggs!) evenly over each of the patties and tuck in any spills to keep the patty shape.

Cover and cook for 3-4 minutes, then flip, cover and cook on the other side for 3-4 minutes, until done!

For the Lemon Mayonnaise:

Combine all of the ingredients in a bowl.

To assemble:

Use 1 tsp of the Lemon Mayonnaise on each half of each English muffin for the sandwich.

Put one patty, some lettuce, tomato, and even some pickle on each English muffin and enjoy!
