Cranberry & Smoked Almond Chicken Salad!

This beautiful and delicious salad has layers upon layers of texture and flavor, and it has all of the protein and nutrition you are looking for! The dressing is a little sweet, but not too sweet, and this is such an amazing way to dress up canned chicken too!

When we’re watching our calories we do have to be careful with ingredients like nuts and dried fruits, but it doesn’t mean that we can’t eat them – without the almonds and the cranberries this salad definitely wouldn’t be the same. You can of course substitute regular almonds, but these smoked almonds add that salty, smokey, savory bite that really make it so much better! …and that sprinkling of dried cranberries brings a sweet tartness that pairs so well.

I also love using cabbage instead of lettuce here because it adds an extra crunch and it also helps the leftovers keep without getting soggy.
