The secret to a tender, juicy breast cooked on the stovetop is to pound it thin before you season and cook it. …and when you rub on the oil, and use your favorite nonstick pan, you don’t need to add extra cooking fat. Make sure that your pan is hot before you lay the chicken in, and no-touchy for at least 4 minutes! So great for dinner and just awesome to have extras to eat throughout the week!

Pound each chicken breast between two sheets of plastic wrap on both sides, until flattened.

Put all of the pounded chicken in a bowl, and add salt, pepper, garlic powder, onion powder, herbes de Provence (all to taste - measure with your heart and don't be afraid to season your chicken!).

Add 1 tbsp of olive oil to the seasoned chicken, and massage the spices and the oil into the chicken to coat evenly.

Place each breast in a dry, nonstick skillet over medium heat and cook on the first side for 5 minutes without disturbing, so that the chicken gets nice and brown.

Flip and cook the chicken on the other side for about 4 more minutes, until cooked through, and enjoy!
