Indian Spiced Beef & Chickpea Scramble!

Difficulty: Beginner

I made this quick, high protein, high fiber scramble on a weeknight when I really had no plan for what to cook. I used simple ingredients that I had in my fridge, added some aromatic vegetables like ginger, onion, and garlic, and seasoned the whole pot with lots of really fragrant spices. It turned out to be an absolutely delicious, hearty and comforting dish! I just love any meal that gets scrambled all together in one single pot — so easy!
