You can try my recipe for Chicken Apple Rosemary Sausage or use store bought (might change the nutrition numbers a bit). Chicken sausage is delicious crumbled into a breakfast scramble! It’s high in protein, low in calories and bit on flavor! I added a bit of leftover cooked squash, and served an English muffin half on the side, so I got my fiber in too! I seriously think I’m at the point where I will mix almost anything into my eggs.

In a small bowl, scramble the egg with the egg whites.
In a small skillet over medium heat, cook the squash and the sausage in the olive oil until they are warmed through.
Add the egg mixture and cook until the eggs are done.
Add a buttered English muffin half on the side, and enjoy!
