This protein-packed pasta dish is spicy, saucy, a little creamy, and so delicious!
Sometimes you just have to feed that craving for a Cajun pasta moment, and when I’m in the mood for something I really like to find a way! I’m not a fan of restriction, but I am a fan of feeding myself intentionally and meeting my nutrition goals!
…and call me weird, but I just love that feeling when I know I’ve had pasta. So satisfying. I was so full when I was finished!

Cajun Pasta with Shrimp & Andouille Sausage!

Great for dinner, and even better the next day as leftovers!

Cook the sausage in 1 tbsp of butter in a large skillet over medium heat until the sausage is toasted, then remove the sausage to a bowl and set aside.
In the same skillet, melt the other tbsp of butter then add the shrimp in an even layer.
Season the shrimp generously with the Cajun seasoning, cook until toasted on both sides, then remove the shrimp to a bowl and set aside.
To the same skillet, add the peppers, onion and garlic, and sprinkle with more Cajun seasoning.
Add the wine to bring up the brown bits in the bottom.
After the vegetables have softened and cooked down, add the canned crushed tomatoes and ½-1 can of water, and sprinkle with more Cajun seasoning.
Add the toasted sausage, and cook for about 10 minutes.
Add the heavy cream, return the shrimp to the pot, then stir in some chopped parsley.
Add some pasta cooking water to make the dish a little more saucy.
Serve over 1 cup of cooked pasta, and enjoy!
