I’m so excited! I know I always say that everything I make is delicious (and, ahem, that is true), but GUYS! In another effort to keep the oven off on a hot day, I dialed in this VERY EASY recipe for a pulled pork sandwich that keeps the protein high and the calories down, and it is SO SO FABULOUS!
I used all the good stuff – real, full fat mayonnaise for the coleslaw and regular (not sugar free) Kinder’s BBQ sauce (not sponsored).
Swapping a pork shoulder for a pork tenderloin is such a good idea and it cooks up so well in the crockpot! …and with a simple dressing and a bag of coleslaw from the produce section, you can top off that luscious pork with the perfect, creamy crunchy bite! The Oroweat Sandwich Thins (not sponsored) were nice and big too, and they made a great vehicle for all of that deliciousness. …and, oh yeah, I was STUFFED when I was done. Very satisfying!

Slow Cooker BBQ Pulled Pork Tenderloin Sandwich!

This made the most amazing leftovers. I was so happy to have this sandwich again the next day for lunch!

For the Pulled Pork:
Cut the pork tenderloins in half, season them on both sides with salt & pepper, then place the cut and seasoned tenderloins in your slow cooker.
Add the onion, garlic, and barbecue sauce to the slow cooker, and stir until everything is combined.
Set the slow cooker on high and cook the pork a minimum of 6 hours.
When the pork is tender, shred the pork by pulling the pieces apart with a fork, and stir the shredded pork into the accumulated juices in the slow cooker.
For the Coleslaw:
In the bottom of large bowl, whisk together the mayonnaise, sugar, vinegar, dry mustard, celery seed, salt & pepper.
Add the shredded cabbage, and toss everything to combine.
For the Sandwich:
Pile 145g of pulled pork onto a sandwich thin.
Drizzle on extra barbecue sauce.
Top with 50g coleslaw.
Close up the sandwich, and enjoy!
