Bacon, Egg White & Avocado Breakfast Sandwich!

When I went to make this breakfast sandwich I absolutely didn’t set out to add it to the website, but when I decided what I was going to put in it I was so pleased with the amount of protein and fiber I packed in, and all for under 500 calories, I just had to share!

This nutrient dense breakfast sandwich is so quick and easy, and great for a morning when you wake up hungry! …and maybe craving a little bacon.

  1. Fry the bacon in a large non-stick skillet, then remove most of the excess bacon grease.

  2. In a small bowl, season the egg whites with salt & pepper, and dried dill (to taste), then whisk to combine.

  3. Pour the egg whites in the same non-stick skillet that you used to cook your bacon.

  4. When the eggs are cooked through, top with the cheese, turn the heat off, and cover the pan to keep the eggs warm while you toast your bread.

  5. Add the butter to the toast, then layer on the cheesy, eggs, the bacon, and the avocado.

  6. Season the avocado with salt & pepper, then close up the sandwich, and enjoy!
