Andouille Sausage Bowl!

Servings: 2 Difficulty: Beginner

I found these AmyLu chicken sausages at Costco and decided to give them a try. They are not only delicious, but they are also low in calories and high in protein! I just love this healthy bowl of goodness. This is proof tht eating healthy is so not boring!


Makes 2 servings: 34g Protein, 20g Fiber, 585 Calories per serving

Description

It looks like a lot of work, but most of it gets done in the oven! While the vegetables are roasting just fry up the sausages and make a simple salad!

Ingredients

For the Roasted Butternut Squash:

For the Roasted Mini Bell Peppers:

For the Simple Salad:

For the Andouille Sausage:

Instructions

For the Roasted Butternut Squash:

  1. Toss all of the ingredients together in a large bowl.

  2. Dump the seasoned squash on a baking try lined with parchment paper.

  3. Roast the squash in a 375 degree oven, tossing about halfway through, until softened and roasted (about 40 minutes).

For the Roasted Mini Bell Peppers:

  1. In the same bowl you used to prepare the butternut squash, combine all of the ingredients for the peppers.

  2. Dump the seasoned peppers on a baking try lined with parchment paper.

  3. Roast the peppers in the same 375 degree oven, tossing about halfway through, until softened and roasted (about 30 minutes).

For the Simple Salad:

  1. In the bottom of your salad bowl, whisk together the oil, vinegar, and salt & pepper.

  2. Add the mixed greens and tomatoes, and wait to toss the salad until dinner is ready (so that it doesn't get soggy). You can store it in the fridge while the rest is cooking to keep it nice and crisp.

For the Andouille Sausage:

  1. Saute the sausage in a non-stick skillet over medium high heat.  No oil needed!
