Shrimp Roll! I don’t know what it is about springtime, but a lobster roll or a shrimp roll is totally one of my springtime cravings! This shrimp roll has got to be one of the most fun and tastiest ways to get your protein in too!

We have to satisfy our cravings, and this was so easy to make and fit into my meal plan for the day! Just make sure to measure that mayo (don’t eyeball it) and you’re good!

I really do mean it when I say I am in love.

Makes 4 servings: 38g Protein, 1g Fiber, 392 Calories per serving

  1. Sauté the shrimp in the butter until cooked through, seasoning with Old Bay Seasoning, salt & pepper.

  2. Remove the cooked shrimp to a bowl, let cool slightly, then cut the shrimp into bite-size pieces and set it aside.

  3. In a separate medium bowl, combine the mayonnaise, lemon zest, lemon juice, celery, dill and chives.

  4. Add the cooked shrimp to the dressing and toss everything together, seasoning to taste with salt & pepper.

  5. Divide the shrimp salad between the four toasted rolls and enjoy!
