The leftovers are so delicious and can easily be packed for lunch and heated in the microwave!
Process the mushrooms in a food processor then transfer them to a large bowl.
In the same food processor, process the onion, celery, and carrot, and add them to the bowl with the mushrooms.
Add the turkey, the seasonings, and the egg to the bowl with the processed vegetables.
Combine the mixture, then divide it to form 4 burger patties (the mixture will be soft).
Fry the burgers on both sides in the olive oil.
When the burgers almost cooked through, top each patty with a slice of cheese and continue to cook until the cheese is melted.
Combine all of the ingredients in a small bowl.
Spread the Dijon Yogurt Sauce on the top and the bottom of each sandwich thin.
Place the cooked turkey burger on the bottom bun.
Top with arugula, and enjoy!
