If you are vegan or vegetarian, it is totally fine to swap the chicken bone broth for vegetable broth. It will just change the macros just a little bit.
And this one is GREAT for meal prep - it's even better the next day!
Saute the onion, ginger, and garlic in the grapeseed oil, in a deep pot over medium heat, season with salt & pepper, and cook until the vegetables are softened and slightly browned.
Add the curry powder, turmeric powder, and red pepper flakes, and continue to cook for 1 minute to toast the spices.
Add the lentils and toss to combine, then add the coconut milk, bone broth, and nutritional yeast.
Bring the curry to a bowl then reduce to a simmer, cooking uncovered until the lentils are cooked through and the mixture forms a stew (approximately 40 minutes), adding more salt to taste.
Combine the yogurt, lime zest, cilantro, and salt & pepper in a small bowl.
Serve 1/3 of the curry and 1/3 of the yogurt sauce with 1/3 cup jasmine rice, and enjoy!
