The Most Delicious & Nutritious Taco Meat!

I am calling this taco meat, but you can stuff this flavorful mixture into a tortilla to make a burrito, pile it on a sweet potato, or make it into a bowl with some rice! However you decide to eat it, I promise that you will love it!

I use very lean ground beef to keep the fat and calories down, I amp up the flavor with a delicious tomato-chicken bouillon powder and tons of spices, I add volume with potatoes, and I add beans to bring the fiber! All of the extras in this ground beef mixture really make the difference, and turn the basic into amazing on so many levels!

If you are looking for a great meal prep idea, this one is for you! You will not be sorry to see this leftover in your refrigerator the next day! It warms quickly in the microwave for a quick lunch, and even a meal on the go!

  1. In a small bowl, combine the bouillon powder with all of the spices, and set it aside.

  2. In a very large skillet over medium heat, add the olive oil, then add the potatoes, season with salt & pepper, and cook for about 5 minutes.

  3. Add the onion and bell pepper, and half of the spice mixture and cook until the vegetables are softened.

  4. Add the ground beef, and the rest of the spice mixture, and continue to cook until the beef is browned.

  5. Stir in the beans and cook for another 5 minutes to heat them through.

  6. Finish by stirring in the cilantro, and enjoy!
