Oatmeal Chocolate Chip Peanut Butter
Banana Grape Nuts Cookies!

I did it! I finally came up with a homemade snack that I could make in a batch and grab on the go, that had some sweetness, was high in protein and fiber, but didn't add too many calories!

I sat down with a ton of cookie recipes and my nutrition tracker and got to work to create this one! This was the first time I've ever tried baking with protein powder and I found that the Orgain vanilla protein powder added a really nice sweetness, and was actually a great substitute for sugar! PB2 added peanut butter, which makes everything taste better. Bob's Red Mill protein oats added a little extra protein. Grape Nuts added great body and texture. ...and Ghirardelli dark chocolate has my whole heart.

Ingredients:

2 Bananas, mashed
2 Eggs
1/4 cup Egg Whites
1 tsp Vanilla
1/2 tsp Salt
1 tsp Cinnamon
1/2 tsp Baking Soda
90g Orgain Vanilla Bean Protein Powder
4 tbsp PB2 Peanut Butter Powder
3 tbsp Flax Seeds
1 1/2 cups Bob's Red Mill Organic Protein Oats
58g Grape Nuts Cereal
45g Golden Raisins, roughly chopped
45g 60% cacao Ghirardelli Bittersweet Chocolate Chips

Instructions:

  1. Add each ingredient to a bowl, stirring between each addition (no mixer needed!).

  2. Scoop into 12 cookies onto a parchment-lined baking sheet.

  3. Bake at 350 for 10-15 minutes until set.


Makes 12 cookies: 11g Protein, 5g Fiber, 200 Calories per cookie
