Marry Me Chicken and Pasta!

You might think that a decadent dish like this for Valentine's Day (ahem, or any day!) would be off limits if you were watching your calories, but that's not true! You absolutely CAN fit this beautiful, delicious, and high protein meal into your meal plan! It's all about portions, and I promise that you will be beyond full and so so satisfied and happy with this one. You and the people that you love deserve to eat food and literally TASTE the love!

Ingredients:

1 ½ lbs boneless skinless Chicken Breast
Salt & Pepper
Italian Seasoning
2 tbsp Olive Oil, divided
2-3 cloves Garlic, chopped
1 tbsp Tomato Paste
5 Sundried Tomatoes, chopped
¼ cup chopped Fresh Basil
¾ cup Chicken Bone Broth
½ cup Heavy Cream
30g grated Parmesan
224g dried Angel Hair Pasta, cooked (1 cup pasta water reserved)

Instructions:

  1. Season the chicken generously with salt, pepper, and Italian seasoning, then toss in 1 tbsp of olive oil to coat.

  2. Brown the chicken on both sides in a pan over medium high heat, then remove the browned chicken to a plate and set it aside.

  3. In the same pan, add 1 tbsp of olive oil, the garlic, and the tomato paste, and cook for about a minute.

  4. To the same pan, add the broth, sundried tomatoes, cream, and parmesan cheese.

  5. Return the browned chicken to the pan and finish cooking the chicken in the sauce, basting the chicken, and turning it from time to time to get it coated in the sauce.

  6. Once the chicken has cooked through and the sauce has thickened, remove the chicken to a dish.

  7. Add the cooked pasta to the sauce, and toss to combine, adding some of the pasta cooking water to loosen up the sauce to your taste

  8. Serve the chicken with the pasta, and enjoy!
