The MOST DELICIOUS Roast Chicken Legs!

These tender, flavor-packed whole chicken legs take a little time to cook, but they couldn't be easier to put together and then the oven does all the work! ... and I bet that you already have everything you need to make them! Chicken is my favorite source of protein so I really like to have it on hand, all cooked up for an easy meal whenever. Take my advice and make extra for leftovers! You'll be so happy to eat this next day too!

Ingredients:

4-6 Whole Chicken Legs
1 tsp dried Thyme
1 tsp dried Parsley
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Cajun Seasoning (I used Emeril’s Essence)
1 tsp Smoked Paprika
1 tsp Salt
1 tsp Black Pepper
2 tsp Olive Oil
¾ cup Chicken Bone Broth
2 tsp Flour

Instructions:

  1. Combine the thyme, parsley, onion powder, garlic powder, Cajun seasoning, smoked paprika, salt and pepper in a small bowl.

  2. Coat the chicken with the olive oil, rub on all of the spice mixture, then set aside to marinate – the longer the better! Overnight is best!

  3. Place the marinated chicken in a baking dish, cover with foil, and place in a 400 degree oven for ½ hour.

  4. Meanwhile, whisk together the bone broth and the flour.

  5. Remove the chicken from the oven, and pour the broth/flour mixture all around the chicken, then cover and place back into the over for another ½ hour.

  6. Remove the chicken from the oven, baste with the pan juices, then return the chicken to the oven, uncovered, basting every 15 minutes until roasted.

  7. Once cooked, cover and let rest for 10 minutes, then enjoy!
