Indian Spiced Beef & Chickpea Scramble!
I made this quick, high protein, high fiber scramble on a weeknight when I really had no plan for what to cook. I used simple ingredients that I had in my fridge, added some aromatic vegetables like ginger, onion, and garlic, and seasoned the whole pot with lots of really fragrant spices. It turned out to be an absolutely delicious, hearty and comforting dish! I just love any meal that gets scrambled all together in one single pot -- so easy!


Ingredients:
Cooking Spray
1 medium Potato, diced
3 tbsp Fresh Ginger, finely chopped
1 large Onion, diced
1 Zucchini, diced
4 cloves Fresh Garlic, chopped
3 tbsp Garam Masala
1 tsp Turmeric
1 tsp whole Cumin Seed
1/2 tsp whole Mustard Seed
1 lb 85/15 Ground Beef
1 cup Fresh Cilantro
16 oz can of Chickpeas, drained
Salt & Pepper
Instructions:
Coat a non-stick skillet over medium heat with cooking spray.
Add the potatoes, ginger, and onions, season with salt & pepper, and cook for about 3-5 minutes until
the onions start to soften.
Add the zucchini, garlic, and all of the spices, and cook for about 1 minute, stirring to be sure that the spices do not burn.
Add the ground beef, season with salt & pepper, and cook until the beef is browned.
Add the cilantro and the chickpeas, cook for about 5 more minutes to blend the flavors, and enjoy!
Makes 4 servings: 35g Protein, 10g Fiber, 576 Calories per serving
