Chicken & Artichoke Pasta!

I’ve lost just over 35 lbs naturally, and I’ve kept it off for more than a year now. One of the ways I’ve been able to do that is to make sure that I’ve created a lifestyle around food that doesn’t require me to restrict anything!

Do I meet my protein and fiber goals, dial in the macros, and eat an intentional portion size? Yes! Is anything off limits? No! I am a foodie who lives to eat, and pasta is one of my favorite foods! Of course I still eat it! These days I serve pasta more as a base for protein and fiber packed ingredients, and shifting the ratio of protein to pasta makes me feel really full and satisfied!

I know the weight I’ve lost is never coming back because I’ve found a way to eat that includes all of my favorite foods, that I can truly live with forever, and it makes me so happy.

You do not have to restrict the food you love to eat healthy, and you definitely don't need to give up pasta!

  1. Boil the pasta in salted water until just short of cooked (al dente), reserving some of the pasta cooking water.

  2. In a medium bowl, season the raw chicken generously with Italian seasoning, and some salt & pepper.

  3. In a large skillet, brown the seasoned chicken in the olive oil, then remove it to a clean bowl (the chicken will not be cooked through).

  4. In the same skillet, add the tomatoes and garlic.

  5. Season the tomatoes generously with Italian seasoning, and some salt & pepper, and cook until the tomatoes start to soften, adding some pasta cooking water to begin to form a sauce.

  6. Add the artichokes, the browned chicken, and the pasta to the skillet and cook until the chicken is cooked through, adding some pasta water to form more of a sauce.

  7. Finish with fresh basil and enjoy!
