On our summer vacation this year, we headed to Charleston, South Carolina where we ate our way through that town and had some of the best southern food I've ever had in my life! Many of the restaurants and bars in Charleston had some form of pimento cheese, and I just loved how no two versions were the same. My twist is the basic, classic recipe, but to add protein and keep the calories down a bit I swap the mayo for cottage cheese and use reduced fat cheese. The result is a cheesy, sweet peppery, briny dip that is absolutely packed with flavor!
I found this inspiration in the summer, but this pimento cheese dip will definitely make its way into the fall to be enjoyed on game day during football season! It is great on crisp, fresh bell peppers and cucumbers, or pair it with your favorite chips!
