So much flavor from such simple ingredients! It's all about the spices!
Coat a non-stick skillet over medium heat with cooking spray.
Add the potatoes, ginger, and onions, season with salt & pepper, and cook for about 3-5 minutes until the onions start to soften.
Add the zucchini, garlic, and all of the spices, and cook for about 1 minute, stirring to be sure that the spices do not burn.
Add the ground beef, season with salt & pepper, and cook until the beef is browned.
Add the cilantro and the chickpeas, cook for about 5 more minutes to blend the flavors, and enjoy!
