Cheeseburger!

For some people, it’s pizza. For some people, it’s tacos. For some people, it’s french fries. For me, it’s a cheeseburger! I love a cheeseburger so much that I have been known to eat them for breakfast! …and it was a cheeseburger that was my #1 pregnancy craving with my youngest daughter. I just cannot live in a world where a cheeseburger is off limits. When I crave one, I eat one.

These days, I use 93% lean ground beef to keep the fat and the calories lower, which allows me to have a nice, big 1/3 lb burger with full fat cheese! I also save a few calories by swapping the traditional bun for a 100-calorie English muffin, and I have to say that I really like the meat-to-bun ration with the English muffin!

…and, yes, I use real, full fat mayonnaise. A little mayo combined with some yellow mustard is just enough sauce to bring that rich creaminess that I love on my burger.

I love to make a whole batch of cheeseburgers for my meal prep. They heat up so great in the microwave for a quick dinner or a quick lunch!

Ingredients

Instructions

  1. Season the ground beef patty with onion powder, garlic powder, and salt & pepper.

  2. Fry the patty in a skillet until cooked just short of your desired doneness.

  3. Add the cheese and continue to cook until the cheese is melted.

  4. Divide the mayonnaise and mustard between the two halves of the English muffin, then pile on the cheeseburger, onion, pickles, tomato, and arugula, and enjoy!
