Chicken Cutlets!
Chicken cutlets are high in protein! ...and they are literally my FAVORITE food!
If you are on a health journey and you have a favorite meal that you don't feel like you can enjoy, I promise that there is a way! I used pretty much everything that I would normally use, but I DID measure and weigh my ingredients!
It's no secret that I track my nutrition, and I worked with my tracker to get the macros on these beauties right where I wanted them to be. I had one whole cutlet for dinner and another for lunch, straight from the fridge (if you know, you know).
So darn good. It's my soul food.


Ingredients:
3 7-oz boneless skinless Chicken Breasts, pounded thin
1 Egg
2 tbsp Water
1/2 cup Progresso Italian Style Bread Crumbs
3/4 tsp dried Basil
2 cloves Garlic, finely chopped
1/4 cup Vegetable Oil
Salt & Pepper
Instructions:
Season the chicken breasts on both sides with salt & pepper.
In a wide bowl, scramble the egg and water.
In a separate wide bowl, combine the bread crumbs, basil, and garlic.
Dip each chicken breast on both sides in the egg mixture, then coat both sides with the bread crumb mixture.
Fry the chicken in the oil on both sides in a nonstick skillet until cooked through, and enjoy!
Makes 3 servings: 44g Protein, 1g Fiber, 454 Calories per serving
