My lunches over here really aren't fancy. It's either leftovers from the night before or a simple salad like this. ...but you can believe that I always look forward to my mid-day meal, and I always get that nutrition in!

151g Cucumber, cut into chunks
1 can Wild Planet Wild Albacore Tuna
12g Olive Oil
Lemon Juice (to taste)
Salt & Pepper
