Chunky Ranch Chicken Breast Salad!
This delicious, super quick, high protein, low calorie salad is the perfect easy meal for one to make with your leftover chicken!
If you are tracking your calories like me, you know that salad dressing can really add up. This simple salad dressing combo is less than 70 calories for the whole bowl!
I was as hungry as a lumberjack that day, and had room for these macros, but if you want a different amount of protein and calories in your salad just dial down the chicken a little, or use boneless skinless chicken breast!



For the Dressing, whisk together:
26g 2% Greek Yogurt mixed with Ranch Seasoning (to taste)
1 tsp Olive Oil
Lemon Juice (to taste)
Dried Oregano (to taste – I use a lot)
For the Salad:
57g Red Onion, sliced
130g Cucumber, cut into chunks
54g Avocado
238g Tomatoes, cut into chunks
168g roasted Chicken Breast (with the skin on)
Makes 1 serving: 53g Protein, 9g Fiber, 540 Calories
