Asian Marinated Chicken Tacos with
Thai Peanut Sauce!

You will not believe how much flavor is in these protein and fiber-packed tacos! This dinner was unbelievable and it made awesome leftovers! This is a really great one for meal prep, and you can even just make the chicken if you want! It's so good on its own!

The Thai peanut sauce is ridiculously good! Of course, have as much as you want, but if you are in a calorie deficit, you'll definitely want to measure how much you use to know what to put in your tracker.

For the Asian Marinated Chicken:
2 Limes, juiced
½ cup Soy Sauce
3 tbsp Brown Sugar
2 tbsp Avocado Oil
1 tbsp Fish Sauce
1 tbsp Sriracha Sauce
4 cloves Garlic, minced
2-3 tbsp Fresh Ginger, minced
1/3 cup chopped Cilantro
1/3 cup sliced Green Onions
1 ½ - 2 lbs boneless skinless Chicken Thighs

  1. Combine the lime juice, soy sauce, brown sugar, avocado oil, fish sauce, sriracha, garlic, ginger, cilantro and green onions in a bowl and whisk to combine.

  2. Pour the mixture over the chicken and marinate 1-4 hours in the refrigerator.

  3. Cook the chicken (pan fry, air fry, bake at 400, or grill).


For the Thai Peanut Sauce:
1/3 cup Peanut Butter
2 tbsp Brown Sugar
1 Lime, juiced
1 tbsp Soy Sauce
2 cloves Garlic, minced
1 tbsp minced Fresh Ginger
1 tsp Sriracha Sauce
Hot Water

  1. Combine the peanut butter, brown sugar, lime juice, soy sauce, garlic, ginger and sriracha in a bowl and mix to combine.

  2. Add hot water to thin the sauce out to a pouring consistency.


For the tacos:
Mission Carb Balance Tortillas
Red Cabbage
Bell Pepper
Green Onions
Cilantro

1 serving is two tacos with 5 oz of chicken, 37g of peanut sauce and the garnishes: 42g Protein, 38g Fiber, 536 Calories per serving (macros from the video adjusted just a teensy bit).
