I love to take leftovers and turn them into a hearty breakfast scramble for a nutritious breakfast! You can try my recipe for Chicken Apple Rosemary Sausage or use store bought (might change the nutrition numbers a bit). Chicken sausage is delicious crumbled into a breakfast scramble! It’s high in protein, low in calories and bit on flavor! I added a bit of leftover cooked squash, and served an English muffin half on the side, so I got my fiber in too! I seriously think I’m at the point where I will mix almost anything into my eggs.
